Thai beef salad.
The most surprising thing about this salad – spicy rice powder. It gives the salad the density and rich taste, while remaining virtually invisible.

Ingredients

- 1 tsp sweet paprika
- 1 tsp Cayenne pepper
- 1 tbsp rice
- 1 lime (juice and zest)
- 1 tbsp fish sauce
- 2 tbsp water
- 1 tsp sugar
- 250 g of grilled or baked meat
- 1 large cucumber
- 4 shallots
- 1 bunch of mint
- 1 bunch of cilantro
- 1 Thai pepper
Instructions
- In a pan dry paprika and Cayenne pepper, place in a small bowl. In the same pan fry the rice, stirring often, about 5 min. Cool the rice and grind in a coffee grinder into powder.
- For the filling, mix the lime juice, fish sauce, water, sugar and half of the roasted peppers.
- Meat cut into thin slices and mix with half the dressing.
- Shallots cut into thin rings, hot pepper β rings. Napvite mint leaves, cilantro leaves separate from the stems. Add shallots, pepper and herbs in a bowl with meat, sprinkle with half of the rice powder and mix (the other half of the powder leave it for next time).
- Cucumber cut into thin slanted slices, place on a serving plate. On top lay the seasoned meat.
