Asian Pulled Pork Recipe

Ingredients

  • 3 to 4lbs pork shoulder;
  • 2 cups diced tomatoes;
  • 1 onion, diced;
  • 5 cloves garlic, minced;
  • 2 tbsp. finely grated fresh ginger
  • 1 tbsp. fish sauce;
  • 2 tbsp. coconut aminos;
  • 2 tbsp. sriracha sauce;
  • 1 tbsp. Dijon mustard;
  • 1/4 cup raw honey: (optional)
  • Cooking fat;
  • Freshly ground black pepper;

Instructions

  1. Preheat your oven to 325 F.
  2. Melt some cooking fat in a skillet placed over a medium-high heat, and cook the onion and garlic until soft.
  3. Add the tomatoes, ginger, fish sauce, coconut aminos, sriracha, mustard, honey, and season with black pepper to taste.
  4. Let everything simmer on a low heat for 5 to 6 minutes.
  5. In a large skillet placed over a high heat, brown the pork shoulder on all sides (it should take about 3 to 4 minutes per side).
  6. Place the pork in an oven-proof dish and pour the sauce all over it. Cover the dish with a lid or aluminum foil.
  7. Place in the oven and cook for 4 to 5 hours, or until the pork is easy to shred with a fork.
  8. Completely shred the pork, mix well with the sauce, and serve
