Diet carrot cake

  • 6 egg whites
  • 1.25 cups of sugar
  • 1 Cup applesauce
  • 0.5 cups skim milk
  • 1,5 tsp vanilla
  • 1/4 tsp. ground cloves
  • 0.5 tsp ground nutmeg
  • 1 tbsp ground cinnamon
  • 2 tsp.
  • 1 Cup whole wheat flour
  • 1 Cup plain flour
  • 200 g of canned pineapples
  • 2 cups grated carrots
  • 0.5 cups chopped walnuts
  • 0.5 cups raisins

Instructions

  1. Preheat the oven to 180C. Put a rectangular baking dish with parchment (or grease with oil).
  2. In a bowl, whip whites. Slowly add sugar, then applesauce, skim milk and vanilla. Add cloves, nutmeg, cinnamon, soda and flour.
  3. In a food processor or blender grind together the pineapple with juice. If there is no processor, you can just finely chop pineapple and mix with juice.
  4. Into the batter alternately add the pineapple, carrots, walnuts and raisins. Mix and pour mixture into prepared pan.
  5. Bake 35-40 minutes in preheated oven (180C).
