Homemade Ham Recipe

Ingredients

  • 45 lbs. pork leg;
  • Water;
  • 1/2 cup sea salt;
  • 1/4 cup honey;
  • 4 tbsp. curing salt (Prague Powder #1);
  • 1 tbsp. pickling spice;

Instructions

  1. Place the pork in a bowl large enough to fit the ham and fill it with water.
  2. Add the salt, curing salt, honey, and pickling spice. Give everything a good stir, cover, and place in the refrigerator for 4 to 5 days (1 day per pound of ham) to brine.
  3. When the ham is done brining, remove from the bowl and rinse off.
  4. Place the pork in a big saucepan filled with water and bring to a boil over a medium heat. Let simmer for about 25 minutes per pound or until the interior reaches 155 F.
  5. Let everything cool down for 30 minutes after cooking.
  6. Refrigerate or serve right away.
