Spicy Cranberry Meatballs

Ingredients

  • 2 lbs. ground beef;
  • 1 egg, beaten;
  • 2 garlic cloves, minced;
  • 2 tsp. onion powder;
  • 2 tsp. ground ginger;
  • 2 tsp. ground cinnamon;
  • Sea salt and freshly ground black pepper;
  • Cooking fat;

Ingredients for spicy cranberry sauce

  • 12 oz. fresh cranberries;
  • 1/3 cup raw honey;
  • 1 cup fresh orange juice;
  • 1/4 cup hot chili sauce:
  • 1/2 tsp. ground cumin;
  • 1 tsp. ground cinnamon;
  • Sea salt and freshly ground black pepper;

Instructions

  1. In a saucepan placed over medium heat, dissolve the honey into the orange juice. Stir in the cranberries and cook for about 10 minutes.
  2. Add all the remaining ingredients for the cranberry sauce, mix well, and bring a boil.
  3. Lower the heat and let simmer for another 10 minutes. Season to taste, and remove from the heat.
  4. In a bowl, combine all the ingredients for the meatballs. Season to taste, and mix until well combined.
  5. Roll the meat mixture into bite-sized meatballs.
  6. Melt some cooking fat in a skillet placed over medium-high heat, and brown the meatballs on all sides.
  7. Lower the heat to medium low. Pour the cranberry sauce over the meatballs and let simmer for 10 to 12 minutes, or until the meatballs are no longer pink inside.
