Stuffed celery bites

Ingredients

Scale
  • 34 sticks celery, cut into 14 x 5cm long pieces
  • 100g reduced-fat cottage cheese

Topping for the tomato and basil bites

  • 15g sundried tomatoes, finely chopped
  • 1 tbsp chopped fresh basil
  • pinch white pepper
  • pinch paprika pepper

Topping for the Parma ham and spring onion bites

  • 20g (1 slice) Parma ham, finely chopped
  • 1 spring onion, finely chopped
  • pinch white pepper

Instructions

  1. Divide the cottage cheese between two bowls.
  2. Add sundried tomato, basil and a pinch of white pepper to one bowl, and mix.
  3. Add the spring onion, Parma ham and a pinch of pepper to the other bowl, and mix.
  4. Spoon the mixtures evenly into the hollow of the celery pieces, and sprinkle the sun-dried tomato ones with a pinch of paprika.
