Spinach omelette in bacon

Ingredients

  • 2 eggs
  • 1 small bunch (5070 g) of spinach
  • 1.5 tbsp of grated Parmesan
  • 4 strips of bacon
  • 2 tbsp olive oil
  • ground nutmeg β€” a pinch of
  • salt, black ground pepper β€” to taste
  • cherry tomatoes β€” for decoration

Instructions

  1. Wash the spinach and finely chop.
  2. Beat the eggs with a whisk.
  3. Add the grated cheese and the chopped spinach.
  4. Salt, pepper, and season with nutmeg.
  5. On a heated pan, greased 1 tbsp olive oil, pour in the egg mixture and fry on medium heat for 3 minutes. Flip and cook for another 2-3 minutes.
  6. Place on plate and cut into 4 strips.
  7. Lay on the slices of bacon strips scrambled eggs, screw tight rolls and secure with toothpicks.
  8. Fry the rolls in a pan in the remaining olive oil until Golden brown.
  9. Put on plate and garnish with halved cherry tomatoes.
