Sweet Lemon Shrimp Recipe

Ingredients

  • 1 1/2 lb. shrimp, peeled and deveined;
  • 1/4 cup coconut aminos;
  • 2 tbsp. honey (optional);
  • 1/4 to 1/2 cup freshly squeezed lemon juice;
  • Zest of 1 lemon;
  • 1 garlic clove, minced;
  • 1/2 tsp. fish sauce;
  • Sea salt and freshly ground black pepper;

Instructions

  1. In a large bowl, combine the coconut aminos, honey, lemon juice, lemon zest, garlic, fish sauce, and season with salt and pepper to taste.
  2. Add the shrimp to the sauce and marinate in the refrigerator for 30 min. to 12 hours.
  3. Preheat your oven to 400 F.
  4. Place the shrimp on baking sheet and bake in the oven for 6 to 8 min. (or until firm and cooked through).
  5. Serve warm with some lemon or lime wedges.
