Cinnamon and honey are always friends, and a cinnamon-honey syrup has endless uses—sweeten your tea with it, pour it over ice cream, or drizzle on your oatmeal. In a cocktail context? Try it in a Scotch sour, where smoky blended Scotch and lemon make for a refreshing drink with the warmth of cinnamon and slight floral note of honey coming through. Once you’ve made the cinnamon honey, it’s just a three-ingredient drink, but tastes far more complex.

For the Cinnamon-Honey Syrup
- 2 cinnamon sticks
- 1 cup honey
For the Cocktail
- 2 oz. blended Scotch
- 1 oz. fresh lemon juice
- 3/4 oz. cinnamon-honey syrup
Instructions
- Make the syrup: In a small saucepan, bring 1 cup of water to a boil with the cinnamon sticks. Remove from heat and let sit for 10 minutes. Stir in honey and refrigerate overnight. The next day, discard the cinnamon sticks.
- Make the cocktail: Combine Scotch, lemon juice, and syrup in a cocktail shaker filled with ice. Shake vigorously into a rocks glass filled with ice.
