Ingredients

  • 2 yolks
  • 3 egg whites
  • 150 g flour
  • 200 ml cream 20% fat
  • 1/2 tsp salt
  • 3 tbsp. sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp. orange zest
  • 1 tbsp melted butter
  • 1 banana
  • 1 small Horti grapes
  • 6 strawberries
  • 34 sprigs of red currants
  • 1 large pear
  • 45 raspberries
  • 2 sprigs of mint
  • 23 tsp. honey
  • the juice of half a lemon
  • vegetable oil
  • butter

Instructions

  1. The day before serving, prepare the pancakes. Connect in a bowl the flour, yolks, cream, cinnamon and the zest and mix well with a mixer.
  2. Proteins whisk with sugar and salt in a solid foam. Gently add in the cooked dough, add the melted butter and stir.
  3. Heat pan on medium-high heat. Pour a little vegetable oil and add a piece of butter. Turn the pan so that the oil fully covers the bottom.
  4. Stir the batter and pour into the pan one ladle. Rotate the pan so that the batter completely covers the bottom. Fry without touching the pancake, 1-2 minutes, until edges begin to brown. Pry the edge of the spatula and flip it over. Fry for another 1-2 minutes on the other side, then slide onto a dish.
  5. Yesterday’s pancake put on a upturned heatproof Cup and place in the oven or microwave to dry it and bought a rigid form.
  6. Meanwhile, fruits and berries wash, currants and grapes, remove the stems from the strawberries, remove the stalk. Chop the fruit up into cubes. Mix honey with lemon juice. Pour chopped fruit sauce.
  7. Fill the tarts with filling. Garnish with mint leaves and serve immediately.
