Plum chutney.

This bright rich Indian sauce very well suited to a variety of dishes with a soft mild flavor, and with grilled meat, fish and even spicy cheese.

Plum chutney

Ingredients

Scale
  • 1 kg plums (Hungarian),
  • 300 g red onion,
  • 34 cloves garlic,
  • 200 g root ginger,
  • 1 PC. red chili pepper
  • 100 g sugar,
  • 3 tablespoons Apple cider vinegar
  • 1 stick cinnamon,
  • 3 clove buds,
  • 1 tsp ground coriander,
  • 1 teaspoon ground allspice,
  • ground black pepper, to taste
  • salt to taste,
  • 50 ml of water.

Instructions

  1. Cut plums in half, remove seeds and place in a saucepan with a thick bottom.
  2. Grind onion, garlic, hot pepper, ginger and send to plums.
  3. Grind spices in a coffee grinder and also squirt into the pan.
  4. In a pan add salt, sugar and water, bring the mass to boil. Then lower the fire and Tom sauce for about 1 hour until thick jam. At the end, pour Apple cider vinegar and mix.
  5. The chutney is ready, remove from heat. For longer storage, ladle the hot chutney in sterilized jars, roll up and place in a cool dark place.
