Curried Pork Chops With Honeydew And Cucumber Recipe

Ingredients

  • 4 pork chops
  • 1 tsp. curry powder
  • 2 tsp. olive oil
  • Sea salt and freshly ground black pepper

Ingredients for the honeydew cucumber salad

  • 2 cups honeydew melon, cubed
  • 2 cups cucumber, cubed
  • 1/4 cup extra-virgin oil olive
  • 1 shallot, chopped
  • 1/4 cup fresh cilantro, minced
  • Sea salt and freshly ground black pepper

Instructions

  1. Preheat your grill to high.
  2. Season the pork chops to taste with sea salt and freshly ground black pepper.
  3. In a bowl combine, the olive oil and the curry powder.
  4. Coat the chops with the curry oil.
  5. Grill each chop for 3 to 4 minutes per side.
  6. In a bowl, combine all the ingredients for the salad and toss gently.
  7. Serve the pork chops with the honeydew and cucumber salad.
