- 1 tsp. curry powder
- 2 tsp. olive oil
- Sea salt and freshly ground black pepper
Ingredients for the honeydew cucumber salad
- 2 cups honeydew melon, cubed
- 2 cups cucumber, cubed
- 1/4 cup extra-virgin oil olive
- 1 shallot, chopped
- 1/4 cup fresh cilantro, minced
- Sea salt and freshly ground black pepper
Instructions
- Preheat your grill to high.
- Season the pork chops to taste with sea salt and freshly ground black pepper.
- In a bowl combine, the olive oil and the curry powder.
- Coat the chops with the curry oil.
- Grill each chop for 3 to 4 minutes per side.
- In a bowl, combine all the ingredients for the salad and toss gently.
- Serve the pork chops with the honeydew and cucumber salad.
