Flank Steak with Fresh Greens Recipe

Ingredients

  • 8 oz. beef flank steak
  • 2 cups mixed greens
  • 1 sweet bell pepper, chopped
  • 8 cherry tomatoes, halved
  • 2 green onions, thinly sliced
  • Cooking fat
  • Sea salt and freshly ground black pepper

Ingredients for the dressing

  • 3 tbsp. fresh lime juice
  • 2 tbsp. shallots, minced
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. water
  • 1 clove garlic, minced
  • 1/2 tsp. chili powder
  • 1/4 tsp. ground cumin
  • Sea salt and freshly ground black pepper

Instructions

  1. Prepare the dressing by mixing all the ingredients together in a bowl.
  2. Season the steak to taste with sea salt and freshly ground black pepper.
  3. Melt some cooking fat in a skillet placed over a medium-high heat.
  4. Cook the steak for 3 to 4 minutes per side for a medium-rare cook.
  5. Slice the steak thinly.
  6. Divide the greens between two bowls. Top with the steak and remaining vegetables.
  7. Drizzle with the dressing and serve.
