Looking for the perfect recipe, stumbled upon the recipe in the blog of Anna Vitkovskaya. Here’s what she writes: “These lazy vareniki, dumplings Gogol’s “Evenings on a farm near Dikanka”, will be to jump in the mouth”.

Lazy fried dumplings with spinach

Ingredients

  • Cottage cheese – 350 g
  • Cheese – 150 g
  • Eggs – 2 pcs.
  • Salt – a pinch
  • Spinach leaves – 300 g
  • Flour – 200 g
  • Garlic to taste
  • Rosemary to taste
  • Red pepper to taste

Instructions

  1. Mix the cottage cheese with cheese, add eggs, salt, spinach leaves that I had pre-scalded with boiling water. Gradually add the flour to the mixture.
  2. Spread the prepared dough on a Board, roll a thin “sausage”, cut into small pieces. You can put the finished dumplings for half an hour in the fridge, but we brew at once.
  3. Throw them in boiling water, gently stir, cook for 2 minutes.
  4. In a skillet heat olive oil with garlic, rosemary and red pepper, add to the pan the dumplings, fry them until Golden brown.
