Beef Tenderloin And Shrimp Recipe

Ingredients

  • 2 X 3 oz. beef tenderloin steaks
  • 4 to 6 garlic cloves, peeled
  • Fresh rosemary sprig
  • Cooking fat
  • Sea salt and freshly ground black pepper

Ingredients for the shrimp

  • 10 to 12 shrimp, peeled and deveined
  • 3 tbsp. fresh lime juice
  • 2 garlic cloves, minced
  • 2 tbsp. fresh cilantro, minced
  • 1 tbsp. olive oil
  • Sea salt and freshly ground black pepper

Instructions

  1. In bowl, combine the lime juice, garlic, olive oil, cilantro, and season with salt and pepper to taste.
  2. Pour the marinade over the shrimp in a marinating container (glass or plastic; no metal) and refrigerate for 1 to 2 hours.
  3. Bring the steak to near room temperature and season to taste.
  4. Preheat a skillet over a medium-high heat.
  5. Melt some cooking fat in the skillet; add some fresh rosemary sprigs and the garlic cloves.
  6. Cook the steak for 3 to 4 minutes per side for medium rare, basting with the melted fat from the bottom of the pan.
  7. Remove the steaks and let rest for about 5 minutes.
  8. Cook the shrimp in the same skillet for 2 to 3 minutes per side.
  9. Serve the steaks with shrimp and a nice salad.
