Chicken With Garlic-Roasted Sweet Potatoes Recipe.
This would also be a great recipe to batch cook for meals throughout the week: chicken breast and roasted sweet potatoes are both good hot or cold, and the starch is built right into the recipe so itβs a complete bowl (or Tupperware) of delicious post-workout nutrition.

- 4 boneless skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup. Dijon or whole grain mustard
- 1/4 cup raw honey (optional)
- Juice of half a lemon
- 2 garlic cloves, minced
- 1/2 tbsp. paprika
- 1/4 tsp. cayenne pepper
- 1/4 tsp. red pepper flakes
- Sea salt and freshly ground black pepper
Ingredients for the garlic-roasted sweet potatoes
- 2 cups sweet potatoes, peeled and cubed
- 2 garlic cloves, minced;
- 1 tbsp. olive oil
- Sea salt and freshly ground black pepper
Instructions
- Whisk all the ingredients for the chicken marinade in a glass bowl.
- Add the chicken breasts to the bowl. Cover and marinate in the refrigerator for 2 to 12 hours.
- Preheat your oven to 425 F.
- In a bowl, combine all the ingredients for the sweet potatoes and toss until everything is well combined.
- Place the chicken breasts in a baking dish, and add the sweet potatoes all around them.
- Bake in the oven for 30 to 40 minutes, or until the chicken is no longer pink and the sweet potatoes are soft.
