- 4 bone-in pork chops;
- Fresh thyme;
- Sea salt and freshly ground black pepper;
Ingredients for the BBQ peach sauce
- 2 garlic cloves, minced;
- 1 inch fresh ginger, minced;
- 1 onion, minced;
- 2 to 3 peaches, cut into chunks;
- 2 tbsp. apple cider vinegar;
- 1 1/2 cup homemade ketchup;
- 1/4 cup raw honey; (optional)
- Cooking fat;
- Sea salt and freshly ground black pepper;
Instructions
- In a saucepan, saut? the onion, garlic, and ginger in melted cooking fat over a medium-high heat.
- Cook until fragrant, add all the remaining ingredients for the BBQ sauce, and season to taste.
- Bring the sauce to a boil, lower heat, and let simmer for 25 to 30 minutes.
- Preheat your grill to medium-high.
- Season the pork to taste with sea salt and freshly ground pepper.
- Grill the pork chops for 4 to 5 minutes per side.
- Baste the pork chops with peach BBQ sauce and cook for another minute on each side.
- Serve the pork chops with fresh thyme and extra BBQ sauce.
